The first tarte tatin was created by accident at the Hotel Tatin in Lamotte-Beuvron, France in 1898. The story goes that Stephanie Tatin was overworked one day and accidentaly left the apples for an apple pie cooking for too long. In an attempt to rescue the dish, she placed pastry on the top, threw it in the oven and hoped for the best. And so a classic dessert was born! The Emile Henry Flame tart tatin dishes feature the innovation that has recently drawn attention to the company - the first ceramics that can be used directly on the hob as well as in the oven. This allows for incredible versatility in cooking, and makes this dish the obvious choice for making tarte tatin. Simply caramelise the apples on the hob, then do what Stephanie did - add the pastry and place the dish in the oven!
